Hamburger Stir-Fry

4 servings brown rice (about 1 cup uncooked)
1 to 1-1/2 lbs. ground beef
2 Tbs. toasted sesame oil
2-4 cloves garlic, minced
4-6 green onions, sliced
2 cups broccoli slaw
2 cups napa cabbage, shredded
2 Tbs. soy sauce
crushed red pepper flakes, to taste

Prepare enough brown rice for 4 servings according to package directions.
While rice is cooking, in a medium skillet or wok, brown the ground beef, drain and set aside. Heat sesame oil in the skillet over medium-high heat. Add garlic and green onions, stir-fry for 2 minutes. Add the broccoli slaw and cabbage; stir-fry for 2 minutes. Add rice and soy sauce; stir-fry for 2 more minutes.
Return the cooked ground beef to the skillet with the rice and veggie mixture and season with red pepper flakes. (Or wait until you serve it to add the red pepper if you are cooking for wimps!) Stir ingredients until well combined and heated through, about 2 more minutes. Serve and enjoy!

Note: Regular cole slaw may be substituted for the broccoli slaw. Bok Choy may be subbed for the cabbage.

We like to do ours with regular slaw and chopped broccoli. We have also used the noodles instead of rice and it was super yummy!
