HEART-HEALTHY GARLIC RICE

Ingredients:
2 Tbsp olive oil
¼ cup celery, chopped
¼ cup onion, chopped
¼ cup carrots, chopped
¼ cup bell pepper, chopped
3 cloves garlic, minced
2 cups long-grain brown rice, cooked
2 Tbsp herb & garlic seasoning
1 tsp basil
1 tsp cayenne pepper
1 tsp sea salt
¼ cup cranberry juice

Directions:
Saute’ vegetables in olive oil for 3 minutes on medium-high heat. Reduce heat to low and add rice, seasonings, and cranberry juice. Simmer for about 5 minutes.
